Curried Chickpea Salad

  • 1 Cup Large Toasted Coconut Flakes

  • 2/3 Cup Toasted Cashews

  • 3 1/4 C Cooked Chickpeas

  • 16 Dates Chopped Small

  • 2 Cups Diced Celery

  • 1 Cup Chopped Apple

  • 3 1/4 T Finely Diced Red or Green Onion

  • 1/2 Cup Chopped Cilantro

Dressing

  1. 1/2 C Vegan Mayor Traditional Mayo

  2. 2T Orange Zest or Splash of Orange Juice

  3. 2T Maple Syrup

  4. 4t Apple Cider Vinegar

  5. 4t Yellow Curry Powder or to taste

  6. 1/2t Salt

  7. 1/2t Pepper


General Directions

  1. Mix wet ingredients

  2. Add chopped ingredients to your base chickpeas

  3. Add your dressing to desired sauciness
