Farinata Genovese

Base Ingredients


  • 1/2 lb Chickpea (Garbanzo Flour)

  • 27 oz Water

  • Pinch of Salt

  • 1/4 Cup(ish) Olive Oil

  • Yep! No yeast, baking powder or other stuff. Natural fermentation does the work.

The Goodies - Make it your own!

  • Caramelized Onions

  • Roasted Red Peppers

  • Blistered Tomatoes

  • Fresh Herbs

  • Kalamata Olives

  • Sundried Tomatoes

  • Whatever you put on pizza!

General Directions

  1. The key is a little advanced planning, but not a ton and really passive planning. Before you go to work or whatever, mix the chickpea flour and water and just leave it on the counter. 3ish hours probably a minimum but it could even be the night before.

  2. When you are getting ready to bake, add the olive oil.

  3. Then dress kind of like you are making a pizza or focaccia.

  4. Traditionally probably thinner, but I made this one thicker using a cake or brownie style pan and it worked just fine.

  5. Pour a layer of batter in your lined pan, dress as you'd like.

  6. 400 degree oven for 15-20 minutes.
